We are going to tackle this challenge by making smart choices from the beginning. First and foremost start with a van that includes most of the walls, seating, and flooring. You can spend up to $15-20k to add crash tested seating and flooring using factory supplied crash tested bench seats saves a small fortune. The ideal van, and pretty much the only one available today is a Mercedes Sprinter "Crew" trim. This is a turn key ready van with rear seating, heat duct, walls, and headliner. By starting with a 2WD...you as well can save $10k+ new or used. Most people don't "need" an AWD, a 2WD makes a lot of sense, better gas mileage, lower cost of insurance, and they sell for considerably less new or used due to demand is lower and they are more available.

Upgrade Your Electrical System on a Budget
A reliable electrical system powers your lights, fridge, and devices. You don’t need an expensive setup to get started.
DC Auxillary power in the engine compartment Using a deep-cycle AGM batteries saves space and provides more than enough power when charging with solar and an alternator

Add solar panels. Charge your battery during the day.

Alternator Charging. Charge while driving, solar is not enough to recharge batteries alone

Choose low-power appliances. A 12V fridge or cooler uses less energy than a standard fridge. You don't have 115v for appliances, but you don't really need them. For cooking use a gas stove.
